Apple Rice |
1/3 c. water 1 c. apple juice 2 ½ large Granny Smith apples, peeled and diced (~ 1 lbs.) 2 scallion stalks, chopped fine 1/2 onion, chopped fine 1 cinnamon stick 1 c. white rice 1/8 tsp. ground black pepper |
In large pot, over medium heat, add the apples, scallion, onion and cinnamon stick. Sweat until onions are clear, 3 – 5 min., stirring constantly. Add the rice and pepper, cook 3 mins. Add the apple juice and water. Bring to a simmer and cook until done (or transfer to a rice cooker to finish.). |
